Friends, here I’m sharing a simple meal platter / thali, which has the authentic Andhra recipes. Especially, the roti pachadi (chutney made in a traditional motar-pestle) which has the copyrights of Andhra since decades. Any guesses?!  Okay let me tell you…. In this thali, I did not include any dal / lentils. No particular reason but just didn’t feel like making dal for today. So, this platter has:

Sides: 1) Aloo Tadka (South Indian Andhra style) / Bangaladumpa Muddha Koora / Potato Mash Curry 2) Broad Beans & Baby Corn Curry /  Chikkudukaya – Baby corn koora 3) Fresh Homemade Curds / Yogurt  Main: 1) Steamed White rice / Vedi Annam topped with homemade ghee / neyyi 2)Whole wheat Poori / Fried Indian flat bread Condiment: 1) Andhra Gongura Pachadi / Sorrel Leaves Chutney 2) Handful of chopped onions 3) Green Chilly 4) Papad & 5) Spoonful of fresh butter  Dessert: Bowl of fresh cherries

TIPS & PLAN TO FOLLOW

I made the Potato Curry in my pressure cooker. Yes, I did the tempering in the pressure cooker vessel, added the diced potatoes, spice mix, water. Sealed and pressure cooked for 5 whistles. Which takes just 7-8 mins, on high, from start to finish. 

The prep time of 20 mins is mainly for cutting the broad beans, which needs to be done patiently. The broad beans – corn curry is boiled in microwave & pan fried with very minimum oil. Here instead of baby corn I used frozen sweet corn which tasted delicious.

The Andhra Gongura Pachadi was made by me a week before. It stays good for more than a month too.

I made the dough for poori using my food processor within 3 mins. Cooked the rice in rice cooker.

All items made simultaneously but attentively.🙂 Multi-tasking and using all gadgets available is the key.
