Friends, here is yet another platter, which I made during the middle of the week. Yes! you heard me right, middle of the week. My daughters had a half-day school and coincidendally even my husband was working from home the same day. So, took this as an opportunity to treat them with a full-length thali. And of course, they enjoyed this hearty meal 🙂 This thali has:

Sides: 1) Aloo – Methi Sukhi Sabzi / Potato – Fenugreek Curry 2) Stuffed Banana Peppers / Bharwa Mirchi 3) Lemon Dal / Lentil Stew / Nimmakaya Pappu Main: 1) Steamed White Rice  2) Plain Roti / Whole Wheat Tortilla with Avocado Condiment: 1) Methi Spice Powder / Menthaku Podi 2) Homemade Plain Curd / Yogurt  3) Sliced onons, green chilli and lemon wedges  Fruit: Fresh Papaya slices

Tips & Plan to Follow:

The main prep work for this thali is, to pluck the methi leaves from their twigs. Takes about 10 mins. And to prepare the masala powders used for stuffing the banana peppers. Takes 10 mins. There is nothing to chop for this thali.

I made the Aloo-Methi Sukhi Sabzi and Stuffed Banana Peppers on Stove-top.I boiled the potatoes and white rice in the Instant Pot, using pot-in-pot method. See the pictures below. And used the Instant Pot for making the dal too.

At first started with Pot-in-Pot method for boiling the potatoes and cooking the white rice. It took only 15 mins, 5 mins cook time + 10 mins of Natural pressure release) . You can refer to this>> How to cook rice perfectly (Instant Pot / Stove Top).

While they are cooking, I proceeded with the Stuffed Banana Peppers on stove top. It took just 12 mins for 3 large peppers to be done.

Next, I removed the potatoes and cooked rice out of the Instant Pot. Used the same pot for making the Lemon Dal / Nimmakaya Pappu. Which took 5 more mins.

While its ON, I prepared the dough for Roti / tortilla using the food processor within 4 mins. While the potatoes cooled down, I made the Aloo-Methi Sabzi / Curry on Stove top within 5 mins.

At last, finished off with  Rolling & Making 5 roti(s) within 5 mins. The Spice Powder you see in the pic is pre-made by me, few days ago.

All items made simultaneously but attentively.🙂 Multi-tasking and using all gadgets available is the key.
