Watermelon Rind Energy Balls (No added sugar)

Exceptionally healthy, Instant, Easy to make energy balls / laddoos without any added sweetener except for natural sugars.
Cooling & Rolling Time
Sauce Pan / Vessel (for stove-top method)
(heaped cup) (finely chopped)
Dates (seedless / pitted)
Desiccated Coconut / Dry Coconut Flakes / Powder
Organic Rose Petals
Ghee / Butter
Take the watermelon rind, peel off the green outer layer, finely chop the white part (we need 1 heaped cup)
Pit the dates, measure 1 heaped cup (pressed).
Put a sauce pan / vessel on stove top under medium flame.
Add the ghee / butter let it melt. Transfer the chopped watermelon rind pieces.
Stir them until the pieces are well coated with ghee/butter.
Close the vessel with lid, and let the pieces soften.
Later remove the lid, let it be on flame until water evaporates.(all of this takes 5 to 6 mins)
Let the watermelon rind pieces cool down to room temperature.
Later, transfer them, along with pitted dates, pistachios, to the food processor / mixie
Process to your desired consistency.
Make balls with the processed content, roll each ball onto a plate full of desiccated coconut and organic dry rose petals. Done!
