Easy Homemade Sweet Corn Nuggets in Air Fryer or Deep Fry Methods (with video)

Easy Vegan Golden Brown Corn Nuggets homemade from scratch without using eggs, flour. Recipe below has step wise pics, tips, full video for both Stove Top and Air Fryer Methods.

Equipment

  • 1 Food processor / Blender / Mixie.
  • 1 Deep Frying Pan for stove-top method
  • 1 Air-Fryer for air-fryer method

Ingredients
  

  • 2 cups Sweet Corn / Mokkajonna / Makki (fresh / frozen)
  • 1 cup Rice Flour / Biyyampindi
  • 2 teaspoons Salt (or as per taste)
  • ½ cup Onion pieces (finely chopped)
  • 1 tablespoon Whole Cumin Seeds / Jeera
  • 2 tablespoons Fresh Green Chillies (finely chopped)
  • ½ teaspoon Turmeric Powder
  • ¼ cup Fresh Coriander Leaves (finely chopped)
  • 1 tablespoon Ginger Garlic (chopped/paste)
  • 2 cups Cooking Oil (for deep frying)
  • 1 tablespoon        "     " (for air frying)

Instructions
 

1cup=250ml; ¾ cup=180ml; ½cup=125ml; 1 tbsp=14ml; 1 tsp = 4ml

    Prep Work:

    • Gather all the ingredients at one place. Bring the frozen sweet corn to room temperature.
      Finely chop the onions, green chillies, ginger, garlic and coriander leaves.
    • Into a blender, add the sweet corn and grind them coarsely. Do not add any water.
    • In a wide mixing bowl, add all the these>> finely chopped onions, coarsely ground sweet corn, rice flour, salt, chopped green chillies, cumin seeds/jeera, ginger garlic (paste/chopped).
      The onions, frozen sweet corn do release water as you mix them. Add few tablespoons of water only if needed. Mix everything well.
      Make the batter into small balls. And then pat each ball into circular shaped nugget.

    Deep Fried Easy Sweet Corn Nuggets:

    • Put a deep frying pan or large deep skillet on stove top over high flame. Add oil let it heat.
      Gently drop each uncooked nugget into the hot oil.
    • Let them cook on each side for 2 mins, until they turn golden brown.
      Later remove them using a ladle onto a plate covered with kitchen towel to remove excess oil.

    Air Fried Vegan Homemade Corn Nuggets:

    • Spread the air fryer mesh with a parchment paper / butter paper.
      Place the battered sweet corn patties on the paper. See that they do not touch each other.
    • Close the air fryer lid. Select these settings> Mode to Air Fryer, Time to 10 mins, temp to 200°C / 390°F.
      Half way through apply little oil on each. No need to reverse.
    • Later again set the time to 5 more mins with same temperature. Here you can reverse each, but I did not.
      When the timer is done, Air fryer beeps. Then open the air fryer, gently remove the nuggets and serve. Done!
