Chickpea Burger Patties / Falafel Burger Patties (Air Fryer / Stove top Methods)

Vegan, Gluten Free Chickpea Burger Patties made using chickpeas, sweet potatoes and few basic spices. Recipe below has step wise pics, tips for both Stove Top & Air Fryer methods.

Equipment

  • Air-Fryer for air-fryer method
  • Frying pan (for stove-top method)
  • Instant Pot or Electric Pressure Cooker (for IP method) (to boil)
  • Stove top vessel / Pressure cooker (to boil)

Ingredients
  

  • 1 cup Chickpeas / Chana / Garbanzo beans (black or yellow) (canned / boiled)
  • 2 count Sweet Potatoes (medium size) (steamed / boiled)
  • 2 tablespoons Chickpea flour / Besan / Gram flour (heaped)
  • 1 count Onion (medium size) (finely chopped)
  • 3 twigs Fresh Coriander Leaves (finely chopped)
  • 1 teaspoon Ground Cumin / Jeera Powder
  • 1 count Fresh Green Chillies (finely chopped)
  • 1 teaspoon Salt (or as per taste)
  • 2 tablespoons Cooking Oil (for stove-top method) 
  • 1 teaspoon   " " (for air-fryer method)     

Instructions
 

Prep Work(to soak chickpeas & boil along with sweet potatoes):

  • Take dry chickpeas (¾ cup) into a wide vessel, wash them thoroughly. Add water, 4 times the quantity of beans.
    Let them soak overnight / for 7 to 8 hrs. Later, strain the water before cooking.
  • To boil the soaked chickpeas on STOVE TOP:
    Take the soaked chickpeas, sweet potatoes together into a sauce pan. Add double the water.
    Close with lid, cook for 25 to 30 mins, under high flame, until the chickpeas turn tender. Later, switch off the flame, strain & use.
    To boil the soaked chickpeas in INSTANT POT:
    Take the soaked chickpeas and sweet potatoes together into the instant pot. Add water up to the level that everything is sunk.
    Close the lid, set the valve to SEALING. Select 'Pressure Cook' mode under HIGH PRESSURE, for 10 mins. Release the pressure naturally (NPR).

Prepare Batter & Shape Chickpea Burger Patties:

  • Strain the water from the boiled chickpeas & sweet potatoes. Using a potato masher/processor, mash them coarsely.
    Into a mixing bowl add all these>> chickpea flour/ besan, ground cumin / jeera powder, salt, chopped green chillies, onion and coriander leaves.
  • Without adding any water, mix up everything to make the batter.
    Make small balls as shown, and then pat them with your palm to form small but fat patties.

Pan Fry Chickpea Burger Patties on Stove Top:

  • Put a frying pan on stove-top, under medium flame. Pour the oil, let it heat.
    Gently, place the patties, pan fry them on each side for 2-3 mins.
  • Using a spatula, gently turn each to the other side. Let them fry until they turn golden brown in colour for 2-3 mins. Done!

Air Fryer Chickpea Burger Patties:

  • Brush the base of air-fryer mesh with oil / use an oil-spray throughout. Place the nugget patties over it.
    Select AIR FRYER MODE, time for 8 mins, at temperature 200ºC / 390ºF.
  • When the timer is done, open the air fryer, gently flip each one to the other side, brush each with little oil.
    Select Air Fryer Mode, time to 4 mins, at same temperature.
