Plant Based Chickpea Burger Patties also called as Falafel Patty for Veg Burger, is my new recipe. Just like my previous Air – Fryer Recipes , I have given BOTH stove-top and Air fryer methods. Check the pics below and choose the right method that suits you!
This was the scene when my 3 kids came back from their weekend classes (activities), & while I was half way in making these patties… My younger daughter, very excitedly: “Wooow!! burger patties! Amma, so are we having burgers for dinner???!!!”. Me: “hmmm…that’s the plan but you will have to wait for half an hour more…”.
My elder daughter: “Okay sure, Amma! in the mean while, let us taste these simple patties with the dips first”. For which I agreed and took few snaps while they were savouring.
But, later I realised, that they finished up all. Couldn’t make the veg burgers too. 🙂 🙂 Check the recipe then!

Possible Alterations for the recipe, ‘Vegan Chickpea Burger Patties (Air Fryer, Stove Top)’:
Chickpea variety: I have used black chickpeas while garbanzo beans / yellow chickpeas also work perfectly for the same recipe.
To replace Chickpea Flour / Besan: I have used chickpea flour as its gluten free. Instead you can use same quantity of rice flour (or) plain flour.
Replace Green Chillies: You might use ground black pepper ( 1teaspoon).
WFPB No Oil options: For the air fryer method, you can even eliminate the oil, but just place the patties over the mesh (or) else spread the mesh with parchment paper before placing the patties to fry.

How to store, ‘Plant Based Chickpea Burger Patties’:
Allow the chickpea burger patties to cool completely before storing them.
Place the patties in an airtight container or freezer bags. If using freezer bags, ensure to remove as much air as possible before sealing.
Separate each patty with parchment paper (or) baking paper, to prevent them from sticking together.
Label the container or bags with the date of storage for easy reference.
Store the patties in the freezer for up to 3 months.
When ready to use, thaw the patties in the refrigerator overnight or in the microwave using the defrost setting.
Before serving, re-heat the patties, just for 1 minute, either in an Air Fryer (or) Pan fry (or) Baking methods.

- Sweet Potatoes – 2 medium / 1 large (steamed / boiled)
- Chickpea flour / Besan / Gram flour – 2 tablespoons
- Onion – 1 medium size (finely chopped)
- Fresh Coriander Leaves – 3 twigs (finely chopped)
- Ground Cumin / Jeera Powder – 1 teaspoon
- Fresh Green Chillies – 1 (chopped)
- Salt – as per taste
- Cooking Oil – 2 tablespoons (for stove-top method)
- ” ” – 1 teaspoon (for air-fryer method)
Special Ingredients:
- Chickpea flour / Besan / Gram flour
- Ground Cumin / Jeera Powder

Prep Work (to boil chickpeas & sweet potatoes):
To Soak dry chickpeas / garbanzo beans:
- Take dry chickpeas (¾ cup) into a wide vessel, wash them thoroughly. Add water, 4 times the quantity of beans.
- Let them soak overnight / for 7 to 8 hrs. Later, strain the water before cooking.
To boil the soaked chickpeas on Stove Top:

Tips:
- If using canned / boiled chickpeas, skip the chickpea boiling steps.
- Adjust the salt & spice as per your taste.
- If the specified besan / chickpea flour is not enough, add more such that the chickpea burger patties are firm enough and do not fall apart.
- You can store the pressure cooked chickpeas & sweet potatoes ground mix, in the fridge and make the patties instantly.
- The Instant Pot Method of boiling the chickpeas & sweet potatoes, takes the same time even if the quantities taken are twice or thrice too.
Result:
- These, Chickpea Burger Patties / Falafel Burger Patties (Air Fryer / Stove top), are perfectly cooked both outside and inside.
- Its a complete power packed, ALL IN ONE burger patty which is Vegan, Gluten free, Protein, Iron, Fibre rich.
- I served them with tomato ketchup, along with a healthy salad of red onion & tomato slices.
- They were very flavourful and tasted scrumptious on its own, and I’m sure they would taste even more good when used for making a, ‘Healthy Vegetarian Burger’.

Equipment
- Air-Fryer for air-fryer method
- Frying pan (for stove-top method)
- Instant Pot or Electric Pressure Cooker (for IP method) (to boil)
- Stove top vessel / Pressure cooker (to boil)
Ingredients
- 1 cup Chickpeas / Chana / Garbanzo beans (black or yellow) (canned / boiled)
- 2 count Sweet Potatoes (medium size) (steamed / boiled)
- 2 tablespoons Chickpea flour / Besan / Gram flour (heaped)
- 1 count Onion (medium size) (finely chopped)
- 3 twigs Fresh Coriander Leaves (finely chopped)
- 1 teaspoon Ground Cumin / Jeera Powder
- 1 count Fresh Green Chillies (finely chopped)
- 1 teaspoon Salt (or as per taste)
- 2 tablespoons Cooking Oil (for stove-top method)
- 1 teaspoon " " (for air-fryer method)
Instructions
Prep Work(to soak chickpeas & boil along with sweet potatoes):
- Take dry chickpeas (¾ cup) into a wide vessel, wash them thoroughly. Add water, 4 times the quantity of beans. Let them soak overnight / for 7 to 8 hrs. Later, strain the water before cooking.
- To boil the soaked chickpeas on STOVE TOP:Take the soaked chickpeas, sweet potatoes together into a sauce pan. Add double the water. Close with lid, cook for 25 to 30 mins, under high flame, until the chickpeas turn tender. Later, switch off the flame, strain & use. To boil the soaked chickpeas in INSTANT POT:Take the soaked chickpeas and sweet potatoes together into the instant pot. Add water up to the level that everything is sunk. Close the lid, set the valve to SEALING. Select 'Pressure Cook' mode under HIGH PRESSURE, for 10 mins. Release the pressure naturally (NPR).
Prepare Batter & Shape Chickpea Burger Patties:
- Strain the water from the boiled chickpeas & sweet potatoes. Using a potato masher/processor, mash them coarsely. Into a mixing bowl add all these>> chickpea flour/ besan, ground cumin / jeera powder, salt, chopped green chillies, onion and coriander leaves.
- Without adding any water, mix up everything to make the batter. Make small balls as shown, and then pat them with your palm to form small but fat patties.
Pan Fry Chickpea Burger Patties on Stove Top:
- Put a frying pan on stove-top, under medium flame. Pour the oil, let it heat. Gently, place the patties, pan fry them on each side for 2-3 mins.
- Using a spatula, gently turn each to the other side. Let them fry until they turn golden brown in colour for 2-3 mins. Done!
Air Fryer Chickpea Burger Patties:
- Brush the base of air-fryer mesh with oil / use an oil-spray throughout. Place the nugget patties over it. Select AIR FRYER MODE, time for 8 mins, at temperature 200ºC / 390ºF.
- When the timer is done, open the air fryer, gently flip each one to the other side, brush each with little oil. Select Air Fryer Mode, time to 4 mins, at same temperature.

I don’t have chickpeas flour. Is there a substitute that you’ve used successfully?
Hi Jackie Burns, Yes, insteadof chickpea flour I have used rice flour which worked well. Hope this helps.
