Eggless Orange CupCakes

Equipment

  • Electric Hand whisker / Fork / Manual Hand blender
  • Convection Oven / OTG

Ingredients
  

1 cup=250ml ; ¾ cup=180ml ; ½ cup=125ml ;1 tbsp=14ml ; 1 tsp=4ml

  • 1½ cup + 2 tablespoons All Purpose Flour
  • ½ cup Oil
  • ¾ cup Plain Yogurt/Curd
  • 1 teaspoon Orange Zest
  • ½ teaspoon Baking Soda
  • ¼ teaspoon Orange Essence
  • teaspoon Baking Powder
  • ½ cup Orange Juice
  • 1 cup + 2 tablespoons Sugar
  • 1 teaspoon Orange Food Colour

Instructions
 

PREP WORK:

  • Firstly, line up the muffin trays or cup cake trays with suitable liners of your choice.
  • Switch on the oven and let it preheat at 160°C.

MAKING THE CUPCAKES:

  • Now, in a large bowl pour in the sugar, yogurt and oil.
    Using a hand blender or a whisker, mix everything until the sugar dissolves.
  • Into the same bowl, add the orange essence, orange food colour, orange fruit juice, orange zest.
    Give up everything a quick mix with blender.
  • Sieve in the baking soda, baking powder and flour.
    Using a spatula gently cut and fold everything, till the wet and dry ingredients combine perfectly.
  • Pour this batter into the cup cake moulds up to ¾ level of each hole.
    Put the trays into the pre-heated oven.
  • Change the oven temperature to 180°C and bake them for 15-20 mins or until a toothpick inserted comes out clean.
  • Take the trays out and put them on the cooling rack.
    Once they are cooled completely, only then remove the cupcakes. Done!!
