Grilled Zucchini (Courgette) Vegan Sandwich

Vegan Zucchini Sandwich, a Nutritious & filling sandwich suitable for breakfast, family dinner, picnics (or) kids packed lunch box. Recipe below has step wise pics and tips.

Equipment

  • Frying pan (for stove-top method)
  • Grill Pan (for stove top method) (or) Sandwich Maker

Ingredients
  

  • 4 count Bread Slices (any bread of your choice)
  • ½ cup Zucchini / Courgettes (finely chopped / grated)
  • ½ cup Carrots (grated)
  • 1 count Onion (medium size) (chopped)
  • ½ teaspoon Salt (as per taste)
  • 1 tablespoon Green Chilli / Jalapeno (chopped)
  • 2 tablespoons Fresh Coriander (chopped) 
  • 1 tablespoon Ginger (chopped)
  • 1 tablespoon Garlic (chopped)
  • ¼ teaspoon Turmeric Powder
  • 1 teaspoon Whole Black Pepper (crushed)
  • 2 teaspoons Fresh Butter
  • ½ cup Grated Cheese (any)

Instructions
 

  • Gather all the ingredients at one place and get the chopping done.
  • Put a frying pan on stove-top under medium flame.
    Add the oil let it heat.
  • Later, add the chopped onion, saute for 30 secs.
    Now, transfer the grated carrot,chopped zucchini, green chillies, garlic, ginger.
  • Saute the veggies, just for 2-3 mins. Let them stay crunchy.
    Then add the salt, turmeric power & crushed black pepper.
    Give a mix, and immediately switch the stove off.Remove the pan from the stove.
  • Take the bread slices, apply butter throughout.
    On on side spread the grated cheese and the other side spread the zucchini (courgette) mix.
  • Brush the base of sandwich maker with butter, place the bread slices (one above another) and close the lid.
    Switch on the gadget & toast it until grilled to desired crunch.

Using Sandwich Maker:

  • Brush the base of sandwich maker with butter, place the bread slices (one above another) and close the lid.
    Switch on the gadget & toast it until grilled to desired crunch.

Using Stove-top:

  • Put the grilled pan on stove top under high flame.
    Smear it with butter, place the bread slices, grill for 2 mins on each side. 
  • Using a bread knife / pizza cutter cut each into 2 equal parts. Done!!
