After almost 6 months of lock down & home schooling, my kids will be going back to school in September. Having 3 young kids, I always keep planning for next days school lunches, as I pack homemade lunch boxes for them. 

So, here is one such recipe which I tried, and felt it can be easily made in the mornings.These, Grilled Zucchini (Courgette) Vegan Sandwich, are a great hit with my kids! Even, my husband enjoyed them well. 

These sandwiches greatly fit in for breakfast, weekday quick dinners, kids packed lunch boxes and family picnics.

Possible alterations you could make for, ‘Grilled Zucchini (Courgette) Vegan Sandwich’:

Other Vegetables to use: Instead of Zucchini / Courgettes, you can even use Summer squash, Acorn squash, mellow (or) butternut squash.

Vegan options: I have used Plant Based butter & Plant Based cheese in this recipe. 

WFPB / Whole Food Plant Based Options: To make the recipe completely Whole Food Plant Based, just eliminate the butter & cheese completely. Instead use this green spread>> Avocado & Spinach Spread (Oil Free)  over the bread.

Health Benefits of ‘Grilled Zucchini (Courgette) Vegan Sandwich”:

Carrots are a great source of beta carotene, Vitamin K, folate, vitamin A & anti-oxidants.

Courgettes are AMAZING for the heart and carries great amounts of potassium that reduces blood pressure.

To Conclude: Most importantly, both carrots & zucchini (courgette) are quite low in carbs. Hence adding this recipe into my collection of ⇒  Weight Loss Food / Low Carb Recipes

Grilled Zucchini (Courgette) Vegan Sandwich for breakfast / dinner / kids lunch box / travel

Ingredients:

  • Bread Slices – 4
  • Zucchini / Courgettes (grated) – 1 cup
  • Carrots (chopped) –  1 cup
  • Onion (chopped) – 1 (medium size)
  • Green Chillies (chopped) – 1 tablespoon
  • Fresh Coriander (chopped)  – 2 tablespoons
  • Ginger – 1 tablespoon (chopped)
  • Garlic – 1 tablespoon (chopped)
  • Salt – ½ teaspoon / as per taste  
  • Turmeric Powder – ¼ teaspoon
  • Whole Black Pepper (crushed) – 1 teaspoon
  • Fresh Butter – 2 teaspoons
  • Grated Cheese (any) – ½ cup
  • Cooking Oil – 1 tablespoon

Special Ingredients:

  • Carrots
  • Whole Black Pepper
Grilled Zucchini (Courgette) Vegan Sandwich for breakfast / dinner / kids lunch box / travel

Step wise pics Procedure for ‘Grilled Zucchini / Courgette Vegan Sandwich’:

Prepare the sandwich filling:

Gather all the ingredients at one place and get the chopping done.

Put a frying pan on stove-top under medium flame. Add the oil let it heat.

Later, add the chopped onion, sauté for 30 secs.

Now, transfer the grated carrot, chopped zucchini, green chillies, garlic, ginger.

Sauté the veggies, just for 2 mins. Let them stay crunchy. Then add the salt, turmeric power & crushed black pepper.

Give a mix, and immediately switch the stove off. Remove the pan from the stove.

Adding the filling:

Take the bread slices, apply butter throughout. On on side spread the grated cheese and the other side spread the zucchini / courgette mix.

To Grill the sandwich:

Brush the base of sandwich maker with butter, place the bread slices (one above another) and close the lid.

Switch on the gadget & toast it until grilled to desired crunch.

Using a bread knife / pizza cutter cut each into 2 equal parts. Done!!

Tips & Storage:

  • Adjust the salt and spice as per your taste.
  • You can use any other bread of your choice. I used Whole Wheat Seeded Bread for this recipe.
  • Storage: Make the stuffing well before, store it in the fridge and use it whenever needed.
  • Or else make the sandwiches, wrap them in cling film and store for 1 day in fridge.
  • You can make these sandwiches for breakfast, weekday quick dinners, kids packed lunch boxes and family picnics.

Result:

  • The bland taste of the zucchini was tastefully overlapped with the sweetness of carrots, & flavour of  the spices used.
  • Kids just adored these sandwiches, that I had to make a new batch immediately.
  • We had these, Grilled Zucchini / Courgette Vegan Sandwich, with regular tomato ketchup as a dip and fresh ice berg lettuce on the side, so it made a complete meal.

    Smear it with butter, place the bread slices, grill for 2 mins on each side. 
  • Using a bread knife / pizza cutter cut each into 2 equal parts. Done!!
