Sweet Potato and Spring Onion Sandwich

Vegan Sandwich with Sweet Potatoes are Protein & iron rich sandwich with homemade healthy filling using sweet potatoes and scallions. Recipe below has step wise pics and tips, for both Stove Top & Instant Pot methods.

Equipment

  • 1 Sauce Pan / Vessel (for stove-top method)
  • 1 Instant Pot or Electric Pressure Cooker (for IP method)
  • 1 Wide Mixing Bowl
  • 1 Grill Pan (for stove top method) (or) Sandwich Maker

Ingredients
  

  • 4 slices Bread Slices
  • 1 cup Sweet Potatoes (boiled and mashed)
  • 4 tablespoons Spring Onions / Scallions (chopped)
  • as per taste Salt
  • 1 tablespoon Green Chillies (chopped)
  • 2 tablespoons Fresh Coriander Leaves / Cilantro (chopped)
  • 1 tablespoon Ginger (chopped)
  • 1 tablespoon Garlic (chopped)
  • 1 teaspoon Dry Herbs Mixture (optional)
  • 2 teaspoons Butter
  • ½ cup Grated Cheese (any variety)
  • 1 tablespoon Tomato sauce / ketchup

Instructions
 

PREP WORK:

  • You can boil the sweet potatoes either on Stove Top (or) in an Instant Pot.
    I have given below both the methods so check accordingly.

Boiling the Sweet Potatoes on Stove Top:

  • In a sauce pan add 4 cups of water.
    Put the sweet potatoes inside.
    Close with lid, Let them boil under high flame for 15 to 20 mins.
    Switch the flame OFF, remove the sweet potatoes and use as required.

Boiling the Sweet Potatoes in Instant Pot:

  • Pour 2 cups of water into the Instant Pot.
    Place the trivet, over it place the sweet potatoes.
    Close the IP lid.
    Set the mode to PRESSURE COOK, pressure level to HIGH, time to 5 mins, turn the valve to SEALING.
    Release the pressure naturally (NPR).
    Open the lid and use the sweet potatoes as required.

SANDWICH MAKING:

    To Prepare Sandwich Filling:

    • Take the boiled sweet potatoes, peel and mash them.
    • Into a mixing bowl, take all these>> chopped spring onions, chopped coriander leaves, chopped green chillies, salt, dry herbs mix, chopped ginger, chopped garlic.
    • After mashing the sweet potatoes, mix up all the rest of the ingredients thoroughly.

    Adding the Filling:

    • Apply butter on the bread slices.
      And smear tomato sauce / tomato ketchup on top.
    • Using a spoon, spread the ‘Sweet Potato Stuffing’ throughout the bread slices.
      Top up each slice with a tablespoon of cheese.

    To Grill the sandwich:

    • Using Sandwich maker:
      Brush the base of sandwich maker with butter, place the bread slices (one above another) and close the lid.
      Switch on the gadget & toast it until done.
    • Using Stove top grill pan:
      Put the grilled pan on stove top under high flame.
      Smear it with butter, place the bread slices, grill for 3-4 mins on each side.

    Cut the sandwich:

    • Using a bread knife / pizza cutter cut each into 2 equal parts diagonally. Done!!
