This is a South Indian style brunch platter, that I prepared over the weekend for my family of 5. And please note that it does require prep work of 1 day, for soaking, grinding and fermenting the batter. This platter is Plant Based, Vegan, Gluten Free, Nut Free, and is loaded, in the order of, with protein, iron, fibre, then carbs. A combo that’s totally worth a try.

TIPS & PLAN TO FOLLOW:
Prep Work: The previous morning, I soaked the ingredients needed to make the batter for Ponganalu / Appe / Lentil balls. Later, in the evening grind them to batter. Used the Instant Pot, set to yogurt mode for 8 hrs, to ferment the batter overnight. Used this same recipe of dosa batter to make the Ponganalu/Appe/Lentil balls.
For the Black Eyed Beans / Alasanda Dosa, there is no need of fermentation. I just soaked them overnight but grind them in the morning, just before making the dosa(s).
Cooking: Though the prep work needs a day’s time, the cooking involved takes just 30 mins, for 5 platters.
I started with the chopping needed, two onions, carrot, green chillies and coriander leaves for Dosa toppings.
Next,I started off making ponganalu / appe / lentil balls on stove-top using Aebleskiver Pan / Paniyaram Pan. You might see this video for the process of making them: Vada Ponganalu / NonFried Lentil Fritters
Simultaneouly, I starter making the Black eyed bean dosas (5 count) on the other stove. As this dosa batter doesn’t need any fermentation and is a ready to use type.
While they were steaming, I finished making the fresh red chillies chutney within 10 mins. The recipe link for chutney is for fresh green chillies. But the same recipe can be used for red chillies too. Of course, used my small mixie / blender for the chutney.
The laddoo is also made by me, few days back. These energy balls are especially suitable for winter season.
All items made simultaneously but attentively. Multi-tasking and using all gadgets available is the key.
