White Cabbage and Onion Open Faced Sandwich, is one of the easiest ways to use up the white cabbage and white onions lying in my kitchen since many days. These 2 veggies do not tend to spoil even after a month.
I had to come up with this open faced chunky sandwich just to use them as easily as possible rather than a regular curry (just like>> Cauliflower, Carrots & Peas Stir Fry ) which I regularly prepare.
To my surprise, this, Vegan Open Cabbage Onion Sandwich, came out simply superb. It is so easy to make especially when we have very little time and few regular ingredients.
So, next time, if you are looking for a quick and healthy snack, this Sautéed Cabbage Onion Open Toast Sandwich is for sure to tantalize your taste buds.
Perfectly toasted bread topped with a flavourful medley of cabbage and onions, it’s a delicious treat that’s ready in minutes.

Possible Alterations for, ‘Easy Open Faced Onion Sandwich’:
Cabbage Variety: Purple cabbage, Red Cabbage, Savoy cabbage, Green Cabbage also works well. As we are not stir frying the cabbage but just adding to the sautéed onions.
Adding More Flavour: You can add more flavour to the sandwich by adding any of these into the sautéed onions. Garam Masala Powder, Curry Powder, Cajun Spice Mix, Peri peri Spice Powder
Using Oven: If you are making more than 4 slices of toasts at a time, then you might go for making in Oven. For oven, pre-heat at 180C for 10 mins and then pop them for just 5 mins, over the oven tray covered with baking sheet.
Cheese additions: This would be a good choice. While popping into the air fryer, sprinkle some grated cheese (1 tbsp) over toppings of each bread slice.
Bread to use: I have used 50 50 bread (half white and halt brown). You can use white bread, seeded bread, marble rye bread or brown bread.
Fresh Herbs: Any fresh herbs like basil, thyme, rosemary, mint can also be used instead of coriander.

Ingredients:
- Olive Oil – 3 tablespoons
- Cabbage – 2 cups (chopped)
- White Onion – 1 (large size)
- Red Onions – 2 (medium size)
- Spring Onion / Salad Onion / Green Onions – 3
- Tomatoes – 3 (medium size)
- Kalonji / Nigella Seeds / Onion Seeds – 2 teaspoon
- Salt – as per taste
- Fresh Coriander Leaves / Cilantro Leaves – 1 handful
- Dry Red Chilly Flakes – 1 tablespoon
- Ground Black Peppercorn – 1 tablespoon
- Butter – 1 tablespoon
Special Ingredients:
- Kalonji / Nigella Seeds / Onion Seeds

Step wise pics Procedure for, ‘White Cabbage and Onion Open Toast Sandwich (Air Fryer, Grill Pan)’:
Prep Work:
Gather all the ingredients at one place.

Finely chop the white onions, red onions, spring onions, cabbage, coriander leaves, tomatoes.

Prepare the Veggie Filling:
Put a frying pan or large skillet on stove top over high flame. Add oil, let it heat.
Then, add all these>> chopped white onions, tomatoes, chopped spring onions, onion seeds.
Give a mix. Let them fry for 8 to 10 mins.

Switch the flame OFF. Immediately add all these>> chopped white cabbage, red onions, spring onion greens, dry red chilli flakes, ground black pepper, salt, chopped fresh coriander leaves.

Gently mix up everything so that the veggies are well coated with spices.

Take the bread slices. Apply butter on both sides. Put the prepared veggie filling on each slice.

Stove Top Grilled Cabbage & Onion Open Sandwich:
Put a grill pan on stove top over medium heat to high heat. Brush throughout the pan with cooking oil.
Place the 2 of the prepared bread slices on the pan. Let them grill for 2 to 3 mins.
Optional step: Using a spatula gently turn to the other side. Let it be just for 30 secs.
Immediately remove the sandwiches from pan. Done! (Here, I did not turn to the other side)

Air Fryer White Cabbage & Onion Open Sandwich:
Brush the air fryer mesh with cooking oil. Place the prepared bread slices beside each other on the mesh.
Close the air fryer. Set the MODE to Grill, time to 4 mins, temperature to 180°C/356°F.

Later, when the timer is done, the air fryer beeps. Open the air fryer, remove the sandwiches.
Using a sharp knife / pizza cutter, cut each toast diagonally.

Garnish with chopped fresh coriander leaves (or) spring onion greens. Serve immediately. Done!

Tips & Storage:
- Adjust the salt and spice as per your taste.
- Simply using a store bought veg coleslaw mix to prepare this cabbage sandwich, also makes it a hearty meal.
- I did not add any cheese, as I wanted it to make low in fat open sandwiches for low calorie diet. You might add 2 tablespoons of cheese on each toast just before air frying/grilling.
- If you prefer the toast to be golden brown, then let them be in the air fryer / stove top, for 1 more min.
- Optional Step: Using a spatula gently turn to the other side. Let it be just for 30 secs. Immediately remove the sandwiches from pan. Done! (But, I did not turn to the other side)
- Storage: You can prepare the veggie filling well before, transfer it into an air – tight container. Store it in the refrigerator.
Result:

Equipment
- 1 Frying pan (for stove-top method)
- 1 Grill Pan (for stove top method)
- 1 Air-Fryer for air-fryer method
Ingredients
- 3 tablespoons Olive Oil
- 2 cups Cabbage (chopped)

Thank you for the lovely open onion cabbage sandwich recipe.
The ingredients do not mention tomatoes at all in the recipe card maybe you forgot to mention it.But the pics show tomato slices and chopped ones too.Just thought I should point it out.
