Hello readers, Sharing here one of the platter which I cooked recently (dont exactly remember when I made it). Though the platter has a number of items, its not a complicated one. Just take up each task one after another as per my given instructions, tips below.  And now, this thali has:

Sides: 1) Broccoli – Carrot Stir Fry Bendakaya Stir Fry 2) Yellow Cucumber Dal / Dosakaya Pappu 3) Homemade Curds / Perugu Main: 1) Steamed White Rice  2) Poori / Whole Wheat Fried Flat Bread Condiment: 1) Coconut Spicy Red Chutney / Kobbari – Yendu Mirchi Pachadi  2) Papads 3) Homemade butter  Dessert: Sunflower Seeds Laddoo / Energy Balls

Tips & Plan to Follow:

The main prep work for this thali, is to chop the broccoli & carrots. That itself takes 10 mins. Next, I did the chopping of veggies for dal, chutney, which took 5 more mins.

At first I started with the dal and rice. I made both Dal and plain white rice using PIP (pot in pot method) in an Instant Pot. Which means, added all the ingredients of the dal in the inner pot. Above it put an insert, and placed the rice bowl on the insert. Closed the rice bowl with lid. Set the mode to PRESSURE COOK, under HIGH PRESSURE for 5 mins. (for both dal and white rice). For 2 cups of white rice, I did not soak but just washed and used 1:2 ratio of rice : water.

At the end of this post, you can find the accessories which I used. [Previously, I used to do the same way in a stove top pressure cooker]

While its cooking,  got on with the broccoli stir fry. Kept an eye on the stir fry, by stirring in between, and on the other stove finished off the Spicy Coconut Chutney. All this took, 15 mins.

Later, after the natural pressure release (NPR) of the Instant Pot pressure cooker, finished off the tadka / tempering of the dal on stove top.

Immediately, I started making the laddoos. Prepared them (10 quantity) within 15 mins.

At last, I made the poori /  fried Indian dlat bread, within 2 mins.  I used readily available store bought whole wheat tortilla, and just deep fried in piping hot oil. In the same oil, fried the papads also.

All items made simultaneously but attentively.🙂 Multi-tasking and using all gadgets available is the key.
