Coriander (Cilantro) Baby New Potatoes – quick snack / side, is my favourite of all the recipes, that I made during this week. Such a quick & easy recipe to make, with just few basic ingredients. 

Actually, during the weekdays, I made this as an evening snack for my kids. I just started making without any proper recipe in my mind.

Abruptly, found few baby potatoes in the basket and proceeded with whatever I felt like adding to make the snack tastier.

I chose coriander as the main ingredient for the love I have for it. And here came this below recipe.

“Amma (Mom)! I want this for school lunch tomorrow, please Amma, pleeeease…”, this was my son’s request (rather demand), after eating the snack!!

And my 2 daughters joined their voice too!! 🙂 Happy kids & Happy Mommy!!

Possible Alterations for the recipe, ‘Easy Coriander Leaves Baby New Potatoes’:

Replacing onion powder with very finely chopped onions is one other option. But, you will have to sauté them fist for at least 2 mins before adding all other ingredients.

Instead of garlic powder you might use finely chopped / minced fresh garlic.

Boiling the whole baby potatoes in a stove-top pressure cooker (or) an Instant pot pressure cooker will be the best option, when compared to that in sauce pan on stove-top.

Oil Free Options It can be easily done just by eliminating the oil totally. Instead do the seasoning over the wet boiled baby new potatoes. Tastes great too.

How to serve ‘Vegan Fresh Cilantro Whole New Potatoes’:

The purpose of this recipe, is to serve as a quick snack. Which is the best suitable option to serve.

Packing this for Kids Lunch Box just like me, makes the kids easily empty the box. 🙂

Ingredients:

  • Whole Baby Potatoes – 5 handfuls (400 gm)
  • Olive Oil – 3 tablespoons
  • Fresh Coriander Leaves –  a handful (or) ¼ cup (chopped)
  • Black Salt –  1 tsp (or) as per taste
  • Ground Black Pepper- 3 teaspoon
  • Onion Powder – 1 teaspoon (optional)
  • Garlic Powder – 1 teaspoon (optional)
  • Turmeric Powder – ¼ teaspoon 
  • Crushed Dry Herbs (any) – 1 teaspoon

Special Ingredients:

  • Fresh Coriander Leaves
  • Crushed Dry Herb

Step wise pics Procedure for ‘Easy Coriander Baby Potatoes in Instant Pot (or) Stove Top:

Prep Work:

Gather all the ingredients at one place.

Simple Coriander Baby Potatoes on Stove Top:

Put a sauce pan on stove top over high flame, add water (3 cups), salt (1 teaspoon) and all the baby potatoes. Let it boil with lid closed.

It takes 15 to 20 mins. Then, switch the flame off, strain the water and let the potatoes cool down.

Cut big ones each into 2.

Put a frying pan on stove top under high flame, add the oil & let it heat.

Add all these>> baby potato pieces, chopped coriander leaves, turmeric powder, salt, dry herbs powder, black pepper powder, onion & garlic powder (optional).

Gently stir everything such that the spices are well coated over the potatoes.

Switch the flame off after 2 mins. Done!

Instant Pot Method Cilantro Baby New Potatoes:

Add water (2 cups) and salt (1 teaspoon) into the Instant Pot vessel. Place all the baby potatoes.

Close the IP lid, set mode to PRESSURE COOK, time to 4 mins, pressure level to HIGH PRESSURE. Then switch off the IP.

Later, after 10 mins, open the lid. Strain the water, empty the IP vessel.

Switch ON the IP, set to SAUTE mode, for 3 mins.

Add the Oil let it heat.

When the oil is HOT, add all these>> boiled baby potatoes, black salt, freshly crushed black pepper, any dry herb crushed, chopped coriander leaves.

Tips & Storage:

  • Adjust the salt & spice as per your taste.
  • Canned Baby New Potatoes (or) even frozen baby potatoes can be happily used for this recipe. Just skip the boiling the potatoes part. But use them directly for seasoning.
  • Storage: This, coriander baby potatoes – quick snack / side, is good just for a day.
  • Make & serve as soon as possible for the perfect texture and flavour.

Result:

  • I loved making these, mainly because these were very quick & easy to make.
  • The taste was just mind blowing, with the flavour of fresh coriander / cilantro dominating!
  • Serves excellently as a party starter / appetiser in a potluck.

Ingredients

    I have a tiny cilantro plant in my pantry. So Used it for this snack and OMG it was so simple and tasty.
