Less Time: It takes max of 20 mins from start to finish to make these grain, free, guilt free, low carb pizza slices.
Keto Diet: This recipe is also suitable for Celiac, Keto diets as well.

Possible Alterations for the recipe, ‘Low Carb Eggplant Pizza’:
Cheese variety: Any cheese can be used for this recipe. Like parmesan, goats cheese, cheddar, vegan cheese, dairy cheeses or a mixture of cheeses. I have used Vegan Mozzarella cheese.
Other toppings: Eggplant Pizza is as versatile as a normal pizza. So add any toppings of your choice. Some would be>> fresh olives, fresh herbs, pineapple pieces, boiled sweet corn, broccoli, spinach, kale, mushrooms.
Using stove top grill pan: No, this wouldn’t work on stove top. I tried and it didn’t turn out well. The reason being grill/bake has to be done for a firm pizza base. The stove top grill pan makes it soggy rather than firm.
Oven Baked Method: Just follow the same recipe but one best thing with an oven is you can bake 6 to 8 slices of eggplant pizza at the same time.

Ingredients:
- Eggplant / Aubergine – 1 (6 long slices)
- Olive Oil – 4 tablespoons
- Salt – as per taste
- Dry Red Chilli Flakes – ½ tablespoon
- Garlic Powder – ½ teaspoon
- Dry Oregano herb – [½ tablespoon+½ tablespoon]
- Pizza Sauce / Marinara Sauce – 3 tablespoons
- Red Onions – 1 (large size)
- Green Capsicum / Bell Pepper – 1 half
- Cherry Tomatoes – 10
- Fresh Basil Leaves – 10
- Grated Mozzarella Cheese – 1 cup
Special Ingredients:
- Pizza Sauce / Marinara Sauce
- Dry Oregano herb

Step wise pics Procedure for ‘Homemade Easy Air Fryer Eggplant Pizza Slices’:
Prep Work:
Gather all the ingredients at one place. Cut the onion, capsicum and tomatoes into small pieces.

Into a small mixing bowl, add all these>> olive oil, salt, dry red chilli flakes, garlic powder, dry oregano herb.
Mix well such that the salt is completely dissolved.

Take the eggplant, wash and pat it dry. Cut it length wise into 6 slice. Each slice has to be 2 cm width.

Grilling Eggplant Slices in Air Fryer:
Immediately, using a brush, apply the oil mix on both sides of the slices. Place them on the air fryer mesh.

Close the air fryer. Select mode as GRILL, time to 5 mins, temperature to 180°C / 356°F.
Turn to the other side and set the same settings for 5 more mins.

Add toppings & Bake the Eggplant Pizza:
Now, open the air fryer. On each of the eggplant slice, add all these toppings one after the other>> onion pieces, capsicum pieces, cherry tomato pieces, grated mozzarella, basil leaves, dry oregano herb.

Close the air fryer. Select mode as GRILL, time to 5 mins, temperature to 180°C / 356°F.
When the timer is done, the air fryer beeps. Take out the eggplant pizza slices and serve immediately. Done!

Tips & Storage:
- Adjust the salt & spice as per your taste.
- In case, you have extra eggplant slices, put them in a bowl of water. Place the bowl in fridge, to use the slices later.
- If your air fryer has just AIR FRY / BAKE option alone, select it. I use Instant Pot Vortex Plus Air Fryer Model, which gives me different modes like, Grill, Bake, Air Fry, Dehydrate.
- Once the pizzas are ready just serve them immediately, if not they turn out soggy. If not, you will have to reheat them in the air-fryer again for 1 min, before you serve.
- Storage: These, easy air fryer eggplant pizza slices are not suitable for storage, it would definitely become soggy. It is best to prepare and serve immediately.
Result:
- The taste of this, Homemade Air Fried Keto Eggplant Pizza is a delightful blend of savoury, crispy, and satisfying flavours.
- The crispy eggplant base which is air fried to golden perfection forms the basic plus point for this grain free pizza.
- The other additional elements of this low carb aubergine pizza are classic tomato sauce, gooey melted cheese, herbs & seasonings.
- The inclusion of al these toppings enhances the overall flavour which adds depth and complexity to the pizza.
- Personally, my husband & I really enjoyed them when I made them as a ‘quick dinner for 2’ on a Saturday, along with a glass of fizzy drink. 🙂 🙂

Equipment
- 1 Small mixing bowl
- 1 Air-Fryer for air-fryer method
Ingredients
- 1 count Eggplant / Aubergine (large size)
- 4 tablespoons Olive Oil
- as per taste Salt
- ½ tablespoon Dry Red Chilli Flakes – ½ tablespoon

- 1 count Red Onions (large size)

- 10 count Cherry Tomatoes

1cup=250ml; ¾ cup=180ml; ½cup=125ml; 1 tbsp=14ml; 1 tsp = 4ml
