More often than not, my elder daughter skips breakfast as she leaves for school at 7:15 AM. Whenever she does so, I feel very regretful that I did not force her to eat. I know it is an upsetting situation for many parents, therefore to solve this problem I decided to make this speedy form of breakfast.
This is also an incredibly travel-friendly grab & go snack,whether it is on a plane or as simple as a short car, journey. This is a Vegan, Gluten free, Whole Food Plant based, Protein Rich, Kid friendly breakfast / snack for school or after school-time. Oh, mentioning this, have you seen my collection of after-school snacks?

My statement: “Involve your kids in cooking and see, how healthy their lifestyle will be in their future”.
For, they will be aware of the ingredients & effort put in. Start with this simple recipe to be joy-filled by your children’s merry, proud faces. The happy part is that it only has three ingredients and a baked one, so there is no need to babysit the stove! 🙂
Once I chopped the almonds, I was driven away by an young persistent chef (my younger daughter) who insisted like this…. “Amma (Mum), I will do the rest of the recipe, without any help….. you can tell me the instructions.”
So, I left her to finish the task, and as you see by the result below, she made them excellently. More than the bars, her accomplished smile was of more worth. 🙂 🙂 And, she will always be longing for these bars from now on. I will have to keep baking a constant supply! 😉

- Almonds / Badam (unsalted) – 1 cup
- Coconut Flakes (unsweetened) – 1 cup
- Maple Syrup / Golden Syrup – ¼ cup
- Salt – ¼ teaspoon (optional)
Special Ingredients:
- Coconut Flakes (unsweetened)

Step wise pics Procedure for Vegan Almond Energy Bars:
PREP WORK:

Firstly, line a baking pan / loaf pan with parchment paper and set it aside.
- Using a small knife, cut each almond length wise, into 2-3 pieces.

Switch the oven on at 325 F/ 162 C, to pre-heat before we place the tin.
MAKING:






Tips:
- You can use honey instead of Maple Syrup / Golden Syrup.
- If you are making these for toddlers, cut each almond into 5-6 pieces so that its easy for them to bite.
- Make sure that the baked pan, dries fully or else the bars might break.
- Before storing, wrap each bar with a fresh parchment paper so they don’t stick to each other.
- Store them in an air-tight container, so that they don’t turn hard in open air.
- Don’t store in fridge, but in the pantry shelf would do.
Result:
- These, Vegan Almond Energy Bars, were really good to taste and are handy enough as a ‘grab & go’ snack / breakfast.
- The syrup completely overlapped the other 2 ingredients, and makes the bars chewy in every bite.

Baked Almond Energy Bars
Equipment
- Convection Oven / OTG
- Small Baking tin (square or rectangular shaped)
Ingredients
- 1 cup Almonds / Badam (unsalted)
- 1 cup Coconut Flakes (unsweetened)
- ¼ cup Maple Syrup / Golden Syrup
- ¼ teaspoon Salt (optional)
Instructions
- Firstly, line a baking pan / loaf pan with parchment paper and set it aside.
- Using a small knife, cut each almond length wise, into 2-3 pieces.
- Switch the oven on at 325 F/ 162 C, to pre-heat before we place the tin .
- Take the almond pieces and coconut flakes into a wide mixing bowl.
- Add the salt (optional) and pour the maple syrup/ golden syrup into the same bowl.
- Using a spatula, stir everything until well combined.
- Pour this mixture into the baking pan.
- Using the spatula spread the mixture evenly throughout the baking pan and press down on the mixture that its tightly packed.
- Place the baking pan in the oven & bake for 30 to 35 mins .
- Once done, allow the pan to cool completely for 1 to 1.5 hours on the cooling rack.
- Hold the parchment paper on both sides and gently pull it out of the baking pan.
- Place the sheet along with the baked content, onto a plate.
- Using a sharp knife, slice them into bars (size of your choice).
- Gently peel parchment paper off the bottom of the bars. Store / Serve. Done!!
- Or, Before storing, wrap each bar with a fresh parchment paper. Done!!

Hi, just curious if we can use any nuts for adults ???
Hi Shraddha, yes you can use. Might be walnuts, but just check once in between. Walnuts are not thick skinned like almonds, so bake them for lesser time than mentioned.
