North Indian style 3 course full meal platter / thali, made on stove top / in an Instant Pot.

This is yet another North Indian Vegetarian Thali, after my first platter. Both my daughters wanted this restaurant style full fledged platter, so made this especially for them. And, both of them had their meal in this single platter. Ya, its quite heavy a lunch for kids. But they enjoyed eating from same plate 🙂 This platter has:

Sides: 1) Aloo Korma / Potato Kurma 2) Onion Raita / Onion Yogurt Dip Main: 1) Spring Onion Pulao / Scallion Rice  2) Chapathi / Whole Wheat Tortilla Condiment: 1)Spinach Chutney 2) Handful of chopped onions 3) Green Chilly 4) Lemon Wedge  Dessert: Coconut Fudge / Burfi Fruit: Clementines

Tips & Plan to Follow:

I made the Aloo / Potato Korma Curry and Spring Onion / Scallion Pulao in Instant Pot. I have only one Instant Pot. So made enough quantity for all, within same time. For this thali, the prep work is more when compared to cooking. 

At first, I soaked the rice for Scallion Pulao as per my recipe. In the mean while, made all the prep work for the Rice, Aloo Korma. And prepared the Onion Raita, dough for Chapati / tortilla.

Next, I made the Pulao first in the Instant Pot. Once done, emptied the pot, and started off with the Korma in the same pot. While its ON, I started with the Coconut burfi prep work, i.e grating the fresh coconut.

Making the burfi needs attention, so finished it off within 15 mins. Only then I started making spinach chutney and simultaneously finished rolling & making chapathi / tortilla. 

I made the dough for chapathi / tortilla using my food processor within 3 mins.  Rolling & Making them takes 5 mins.

All items made simultaneously but attentively.🙂 Multi-tasking and using all gadgets available is the key.
