In general, parfait means a layered dessert with fruit, fresh cream and cake. However, in this recipe there is no usage of eggs. As this is just layering and no cooking involved, its very easy to be made even by kids as a holiday fun task.
Its so easy to make as just layering is involved in here, my two daughters made this dessert as a surprise for their Dad on the occasion of Father’s Day. The below pics are taken by me, while the cream is whipped and this extremely appetising dessert is layered by them 🙂
And bear in mind, this dessert is high in fat, egg less. Although it is not vegan but it is of course gluten free. The below measurements are for two large glasses of this yummy dessert.

Possible Alterations for the recipe, ‘Blueberry Parfait with Fresh Cream Recipe’:
To use frozen blueberries: Yes, you can use frozen blueberries, they do work well.
Other options for Whipping cream: The other best option is to use, thick Greek Yogurt / thick hung curd.
To replace blueberries: Strawberries, Raspberries, Blackberries (or) peaches work best for this recipe, in the place of blueberries.

Ingredients:
- Whipping Cream – 1 cup
- Vanilla Essence – 1 teaspoon
- Icing Sugar – ¼ cup
- Oreo Biscuits – 6
- Honey – 4 tablespoons
- Oats Muesli / Rolled Oats – 2 tablespoons
- Kiwi – 1
- Fresh Blueberries – 300 gm (3 heaped cups approx)
Special Ingredients:
- Oreo Biscuits
- Whipping Cream

Step Wise Pics Procedure for ‘Blueberry Parfait with Fresh Cream’:
Prep Work:
- Crush 4 of the Oreo biscuits into rough texture & keep aside.
- Take the whipping cream in a wide bowl, add the icing sugar and vanilla essence.
- Whisk thoroughly up to high peaks, using a hand blender / whisker. Keep this whipped cream aside.
- Take 2 cups of blueberries into a blender/ mixer and make into fine puree.
- Peel the kiwis and chop them into bite size pieces.


Layering the Blueberry Dessert:
- Take two large glasses, add the crushed Oreo biscuits into both.
- Next layer, add the muesli oats, spread them evenly. Divide equally into both glasses.
- Then add two tablespoons of whipped cream.
- Next add a tablespoon of honey.
- Over it, goes another layer of crushed Oreo biscuits.
- Add two tablespoons of blueberry puree.
- And over it two tablespoons of whipped cream.
- The next layers are again honey and oats.
- Next layer comes the whole blueberry fruits that we left.
- And top them again with left over fruit puree alongside the glass.
- On top of it, just drop a blob of whipped cream.
- To finish off decorate the parfait with whole Oreo biscuit, whole blueberries and some kiwi pieces.

Tips:
- While layering the ingredients, be careful that the ingredients don’t mix up.
- You can use any fruit in the place of blueberries, with the same recipe.
- If any whipped cream is left over you can store it in the fridge and use it later too.
- You can layer the dessert well before, put the glasses in fridge and then serve later too.
Result:
- The taste of this, ‘Blueberry and fresh cream parfait’ dessert is exotic, extremely delicious and gives a ‘yummy in the tummy’ feel. 🙂
- My husband loved it mainly because its made by his lovely daughters on Father’s day.
