This recipe for ‘Indian style Spicy Grilled Vegan Lentil Wraps’ made either in Air Fryer or using a Grill Pan, are packed with protein rich lentils and a medley of flavourful ingredients, spices makes the easiest nutritious satisfying meal.

It made a great kids lunch box meal. My kids approved this healthy lentil wraps due to the mass amount of cheese that I added and the rainbow coloured veggies.

Possible Alterations for the recipe, ‘Grilled Vegan Lentil Wraps (Air Fryer or Grill Pan)’:
Vegetables to add: You can skip any of the veggies that I added. Or else, add any of these>> sweet corn, baby corn, grated cabbage.
To eliminate Green Chillies: Dry red chilli flakes, are the best option.
Other lentils to use: Chana Dal can be replaced with whole green moong lentils, or brown lentils. Red lentils would be too mushy to use here.
Adding sauce: I do not prefer to add sauce to this as it would make the wrap soggy and wouldn’t get that crunch after grilling.

Ingredients:
- Chana dal / Split Yellow Chickpea Lentils – 1 cup (after cooking)
- Grated Mozzarella Cheese – ½ cup
- Butter – 1 tablespoon
- Whole Wheat Tortillas – 2 (large size)
Veggies:
- Onions – ½ cup (chopped)
- Red Bell Pepper (capsicum) – ½ cup (chopped)
- Green Bell Pepper (capsicum) – ½ cup (chopped)
- Fresh Tomatoes – ½ cup (chopped)
- Fresh Root Ginger – 1 tablespoon (chopped)
- Coriander / Cilantro Leaves – ¼ cup (finely chopped)
- Fresh Green Chillies – 2 (finely chopped)
- Spring Onion Greens – ¼ cup (chopped)
Spices:
- Garam Masala Powder – 1 teaspoon
- Chat Masala Powder – 1 teaspoon
- Salt – as per taste
To use as glue:
- Plain Flour – 1 tablespoon
- Water – 4 tablespoons
Special Ingredients:
- Garam Masala Powder
- Chat Masala Powder

Step wise pics Procedure for ‘Veggie Loaded Grilled Vegan Lentil Wraps (Air Fryer, Stove Top methods)’:
Prep Work:
As part of the prep work, getting the chana dal cooked is most important.
You can cook the Chana dal either on Stove Top (or) in an Instant Pot. I have given both the methods, so check accordingly.
Stove Top Method to Cook Chana Dal:
Wash the chana dal 2 to 3 times. Take into a sauce pan, pour 3 cups of water, cover with lid so that only ¾th of pan is closed.
Let them cook on stove top under high flame for 15 mins. The lentils should not be over cooked, they have to a bit crunchy.


Instant Pot Method to Cook Chana Dal:
Into the Instant Pot vessel, add the washed chana dal. Pour water such that they are just soaked.
Close the lid, set mode to PRESSURE COOK, pressure level to HIGH, time to 4 MINS, valve to SEALING.
Later, release the pressure naturally.


Gathering Ingredients:
Get the Chana dal cooked. Gather all the ingredients at one place.

Prepare the filling for Lentil Wraps:
Finely chop all the listed veggies and herbs. Into a mixing bowl, add all the ingredients except for cheese, butter and tortillas.

Add half of the cheese as well. Mix up everything.

Add the Filling & Folding into Wraps:
Apply butter throughout the tortilla wrap. Sprinkle cheese only in the middle.

At the centre, in the form of a long rectangle, add 3 tablespoons of chana dal mix which we prepared in the mixing bowl.

In a small cup, add the plain flour, water, make a slurry. Apply the slurry paste all through out the edge of the tortilla. Fold into wraps (watch my video above).


Stove Top Grilled Vegan Indian Lentil Wraps:
Put a grill pan on stove top, high flame. Brush throughout the pan with oil/butter.
When the pan is hot enough, place the filled uncooked wraps, change the flame to low/medium.

After 5 mins, turn them to the other side using a spatula in each hand.
Grill them until you get perfect grill marks. Then, remove from pan.

Using a pizza cutter, cut each wrap diagonally and serve. Done!

Air Fryer Grilled Vegan Indian Lentil Wraps:
Brush the air fryer mesh with cooking oil. Place 2 wraps on the mesh. Close the air fryer.

Set the MODE to GRILL, temperature to 180°C and time to 5 mins.
After 2 mins, pause the air fryer and reverse the wraps to the other side.

When the timer ends, open the air fryer, take each grilled wrap onto a cutting board.
Cut each one diagonally, using a pizza cutter. Serve. Done!

Tips & Storage:
- Adjust the salt & spice as per your taste.
- You can use any tortilla variety. I have used Whole Wheat Tortilla for this recipe.
- Storage: Let the, Grilled Indian style Lentil Wraps, cool down completely. Wrap each of them with cling film (or) foil, to prevent from drying out.
- Put them in an air tight container, they stay good for 3-4 days. Just before serving, reheat them in an Air Fryer (or) stove top pan for 2 mins.
- Or else, you can store the lentil filling separately in fridge, and assemble the wraps to grill, just before serving.
