Crispy Sweet Corn Fritters, its an impromptu recipe that I started off when my kids asked for a crispy savoury snack on a Saturday evening.
That day when I opened the freezer, I just found a bag of sweet corn. And so, started making this, simple, easy Nuggets using Frozen Sweet Corn.
Just like always, I prefer only simple & easy recipes with basic ingredients easily available in any household. Hence, here comes my Simple Plant Based Sweet Corn Nuggets Recipe.
The best past here is I didn’t use potato, there is not much of prep work needed, except to grind the sweet corn. Later, its all like mix the ingredients and fry.
Whether we use an Air Fryer (or) a Stove Top Deep Frying pan, either way these golden brown corn fritters turned scrumptiously good. Let’s read through and make these Easy Gluten Free Sweet Corn Fritters.

Possible Alterations for the recipe, ‘Easy Vegan Sweet Corn Nuggets’:
Green Chillies: can totally be opted out for kids. or else can be replaced with same amount of freshly crushed black peppercorn.
To add cheese: Yes, this can done. just add few tablespoons of Mozzarella cheese along with all the other ingredients while making batter.
Using fresh corn kernels: If you are using fresh corn kernels, there is no need to thaw, just scrape the corn off the cob. Use it directly in the recipe.
Other herbs to add: Finely chopped fresh chives (or) parsley are the best suitable.
Nugget Shape: Any shape like oval, heart shape or circular would suit for the nuggets.

How to store, ‘Homemade Simple Sweet Corn Nuggets’:
By following these storage tips, you can enjoy your homemade sweet corn nuggets at their best, even after being stored for later consumption.
Room Temperature: If you plan to consume within the next few hours, leave them at room temperature.
Refrigeration:
- Cool the nuggets completely, transfer into an airtight container, stack the nuggets in the container, by placing a layer of parchment paper or foil between them to prevent sticking.
- This way the sweet corn nuggets can be refrigerated for up to 2-3 days while maintaining their texture and flavour.
Freezing:
- To store corn nuggets for more extended period, consider flash freezing first. Place the individual nuggets on a baking sheet and freeze until solid.
- Then, transfer the nuggets to a freezer-safe bag or container. Remove as much air as possible to prevent freezer burn.
- This way, Sweet corn nuggets can typically be stored in the freezer for 2-3 months.
Reheating:
- Reheat corn nuggets in an oven or air fryer to get the crispy exterior. Preheat the oven or air fryer, bake for 2 to 3 min.
- If using the microwave, try to consume them immediately after reheating.

Ingredients:
- Sweet Corn / Mokkajonna / Makki – 2 cups (fresh / frozen)
- Rice Flour – 1 cup
- Salt – as per taste
- Onions – 1 cup (finely chopped)
- Whole Cumin Seeds / Jeera – 1 tablespoon
- Fresh Green Chillies – 2 tablespoons (chopped)
- Turmeric Powder – ½ teaspoon
- Fresh Coriander Leaves – ¼ cup (chopped)
- Ginger Garlic (chopped/paste) – 1 tablespoon
- Cooking Oil – 2 cups (for deep frying)
- ” ” – 1 tablespoon (for air frying)
Special Ingredients:
- Rice Flour
- Onions

Step Wise pics Procedure for ‘Homemade Sweet Corn Nuggets in Air Fryer or Deep Fried’:
Prep Work:
Gather all the ingredients at one place. Bring the frozen sweet corn to room temperature.
Finely chop the onions, green chillies, ginger, garlic and coriander leaves.

Into a blender, add the sweet corn and grind them coarsely. Do not add any water.

In a wide mixing bowl, add all the these>> finely chopped onions, coarsely ground sweet corn, rice flour, salt, chopped green chillies, cumin seeds/jeera, ginger garlic (paste/chopped).
The onions, frozen sweet corn do release water as you mix them. Add few tablespoons of water only if needed. Mix everything well.
Make the batter into small balls. And then pat each ball into circular shaped nugget.

Deep Fried Easy Sweet Corn Nuggets:
Put a deep frying pan or large deep skillet on stove top over high flame. Add oil let it heat to the max.
Gently drop each uncooked nugget into the hot oil.

Let them cook on each side for 2 mins, until they turn golden brown.
Later remove them using a ladle onto a plate covered with kitchen towel to remove excess oil.

Air Fryer Vegan Sweet Corn Nuggets:
Spread the air fryer mesh with a parchment paper / butter paper.
Place the battered sweet corn patties on the paper. See that they do not touch each other.

Close the air fryer lid. Select these settings> Mode to Air Fryer, Time to 10 mins, temp to 200°C / 390°F.
Half way through apply little oil on each. No need to reverse.

Later again set the time to 5 more mins with same temperature. Here you can reverse each, but I did not.
When the timer is done, Air fryer beeps. Then open the air fryer, gently remove the nuggets and serve. Done!

Tips:
- Adjust the salt & spice as per your taste.
- You can use frozen sweet corn (or) fresh corn kernels too. Either way works great.
- I have tried the same recipe with fresh corn and even with frozen sweet corn.
- If you are using frozen sweet corn, bring it to room temperature before grinding.
- The rice flour is gluten free and it brings perfect crispy texture to the fried corn nuggets.
- If at all the corn batter turned out too wet, you can add enough of rice flour to get that right batter texture.
- Oven Baked Method: Just follow the same air fryer method, but do pre-heat the oven for 10 mins before baking the sweet corn nuggets.
Result:
- The star of the recipe, ‘Easy Vegan Corn Nuggets’, show is the sweet corn itself.
- These homemade sweet corn nuggets are a delightful blend of sweet and savoury flavours, encased in a crispy, golden shell.
- And the taste is a celebration of simple, wholesome ingredients that come together to create a tasty culinary experience.
- The golden nuggets / Mokkajonna Vada, feature the natural sweetness of corn kernels, providing a burst of freshness and a palatable natural sweetness.

Equipment
- 1 Food processor / Blender / Mixie.
- 1 Deep Frying Pan for stove-top method
- 1 Air-Fryer for air-fryer method
Ingredients
- 2 cups Sweet Corn / Mokkajonna / Makki (fresh / frozen)
- 1 cup Rice Flour / Biyyampindi
- 2 teaspoons Salt (or as per taste)
- ½ cup Onion pieces (finely chopped)
- 1 tablespoon Whole Cumin Seeds / Jeera
- 2 tablespoons Fresh Green Chillies (finely chopped)
- ½ teaspoon Turmeric Powder
- ¼ cup Fresh Coriander Leaves (finely chopped)
- 1 tablespoon Ginger Garlic (chopped/paste)
- 2 cups Cooking Oil (for deep frying)
- 1 tablespoon " " (for air frying)
Instructions
1cup=250ml; ¾ cup=180ml; ½cup=125ml; 1 tbsp=14ml; 1 tsp = 4ml
