Today, I am sharing an easy and quick bhindi recipe / air fryer Bhindi recipe / Bendakaya Ulli koora, yet very healthy at the same time because of very low oil usage.
There are many okra recipes in Indian cuisine, such as this Bhindi Pyaz Sabzi, Bhindi Masala Gravy Curry, Bharwa Bhindi, Kurkure Bhindi, Bhindi Tadka, Bhindi do Pyaza, Dahi Bhindi, Bhindi Peanut Dry Curry Fry etc.

Possible Alterations for, ‘Easy Air Fried Bhindi Pyaz Bhaji’:
Using Fresh Bhindi: Absolutely yes, just use it the same way as frozen bhindi. But, you need to cut the fresh okra tiny pieces as shown.
Onion Variety: I have used red onions but any other onion variety like white, pearl, yellow, shallots can also be used.
Other Masala: This is a South Indian style authentic recipe that I have made. So, I wouldn’t prefer to add. But, options would be Garam Masala Powder ( 1tsp), Amchur Powder / Dry Mango Powder (1 tsp).
Alternative to Green Chillies: I have used fresh green chillies bought from Indian store. Best alternative would be using dry red chili powder / flakes, as per your taste.
Ingredients to skip: Coriander Leaves, Curry leaves might be skipped in case not available. But, they do really add herby aroma to the dish.
Not Using Air Fryer: In this case you will have to add (4 tbsp) more oil to the stove top frying pan. Fry the onions first and then the chopped bhindi pieces over medium heat. Rest of the recipe remains the same.

How to serve, ‘Indian style Okra Onion Dry Curry’:
With Plain Rice: This, Indian Okra dish, is commonly served as a side dish alongside steamed basmati rice. You can even serve along with jeera rice (cumin rice), or any plain pulao for a wholesome and satisfying meal. The combination of the flavourful bhindi ki sabzi and rice is delicious and comforting.
With Indian Bread: Serve the Okra Fry as an accompaniment for Indian roti, paratha, naan along with a gravy curry side in your main course.
As a Filling for Wraps or Sandwiches: Use the Bhindi Onion Dry Curry as a filling for wraps, sandwiches, or rolls. Add some fresh lettuce, and a drizzle of yogurt or chutney for a delicious and satisfying meal on the go.

Ingredients:
- Bhindi / Okra / Bendakaya – 300 gms / 3 cups / 10 oz (frozen / fresh)
- Red Onions – 3 (medium size)
- Curry Leaves – 10
- Fresh Coriander / Cilantro Leaves – 2 tablespoons
- Salt – as per taste
- Lemon / Lime Juice – 1 to 2 tablespoons
- Turmeric Powder – 2 teaspoons
- Fresh Green Chillies – 4
- Ginger Garlic – 1 tablespoon each (fresh / paste)
- Dry Red Chillies – 4
- Cooking Oil – 2 tablespoons
- Cumin Seeds / Jeera – 1 tablespoon
- Mustard Seeds / Aavalu – ½ tablespoon
Special Ingredients:
- Curry Leaves
- Lemon / Lime Juice
- Dry Red Chillies

Step wise pics Procedure for ‘Air Fryer Bhindi Onion Curry / Air Fried Indian Okra Fry’:
Prep Work:
Gather all the ingredients at one place.

Peel and chop the onions into length wise thin slices. Finely chop the ginger, garlic, coriander leaves.
If using fresh okra, wash and cut into tiny pieces. I have used frozen okra.
Split the green chillies length wise. Squeeze the fresh lemon juice.

Oil Free Frying Bhindi pieces in Air Fryer:
Add all the bhindi pieces (frozen / fresh) onto the Air Fryer basket / mesh. Spread throughout the mesh as a single layer.
Close the Air fryer. Set Mode to Air Fryer, Time to 10 mins, temperature to 200°C / 390°F.
Later, when the timer is done, open the air fryer and empty the pieces into a separate plate.


Air Fried Onion Pieces without oil:
Add all the onion pieces onto the air fryer mesh. Spread them throughout as a single layer.
Close the air fryer. Set Mode to Air Fryer, Time to 5 mins, temperature to 180°C / 360°F.
Later, when the timer is done, open the air fryer and add them all to the below stove top frying pan.


Seasoning:
Put a frying pan on stove top over high flame. Add oil and heat it.
Then, add all these>> cumin seeds, mustard seeds, curry leaves, ginger garlic, slit green chillies, slit dry red chillies, turmeric powder.
Stir fry until the mustard seeds pop up.

Transfer all the air fried bhindi and air fried onions into the frying pan. Add salt and gently mix everything.

Switch the flame off after 2 mins. Pour the fresh lemon juice onto the pan.
Add chopped coriander leaves. Mix everything.

Transfer the curry into a serving dish. Done!

Tips & Storage:
- Adjust the salt & spice as per your taste.
- There is no need to pre-heat the air fryer. So, don’t bother about it.
- If you would like to have the onions to be more crispier, set the air fryer for 2 more mins.
- Storage: This, Simple Bhindi Onion Stir Fry Curry, stays absolutely good for 2 days at room temperature. As we have made it with very little oil and even air fried.
- Or else store it in the fridge for up to a week. But, you will have to re-heat in the air fryer for 1 to 2 mins before serving.
Result:
- Indian Okra Onion Dry Curry, or Air Fryer Bhindi Onion Curry, has a distinctive and delicious taste that combines the earthiness of okra with the sweetness of onions and the aromatic flavours of Indian spices.
- Okra, when cooked properly, adds a rich, slightly nutty taste and a satisfyingly chewy texture to the dish. The seeds inside the okra pods also release a subtle nuttiness, enhancing the overall umami profile of the dish.
- Indian spices such as cumin seeds, turmeric and chili powder infuse the dish with not only depth of flavour but also contribute to the dish’s enticing aroma.
- Garnishing with fresh lemon juice and coriander leaves, brings in a refreshing contrast to the savoury and spicy elements.
- As shown in the pics, I served this tasty Air-Fried Okra Curry as a side dish for homemade soft roti.
- The taste was totally fabulous with all the above simple ingredients rightly used.
- Especially my kids who are a fans of bhindi in general, gave a 10 on 10 for this Bhindi Fry Recipe.

Air Fried Okra Onion Indian Curry / Bhindi Pyaz Sabzi in Air Fryer (with video)
Equipment
- 1 Frying pan (for stove-top method)
- 2 Air-Fryer for air-fryer method
Ingredients
- 3 cups apprx Bhindi / Okra / Bendakaya (frozen / fresh) (300 gms / 10 oz)
- 3 count Onions (medium size)
- 10 count Curry Leaves
- 2 tablespoons Fresh Coriander / Cilantro Leaves
- as per taste Salt
- 1 to 2 tablespoons Lemon / Lime Juice
- 2 teaspoons Turmeric Powder
- 4 count Fresh Green Chillies
- 1 tbsp each Ginger Garlic (fresh / paste)
- 4 count Dry Red Chillies
- 2 tablespoons Cooking Oil
- ½ tablespoon Cumin Seeds / Jeera
- ½ tablespoon Mustard Seeds / Aavalu
Instructions
1cup=250ml; ¾ cup=180ml; ½cup=125ml; 1 tbsp=14ml; 1 tsp = 4ml
Prep Work:
- Gather all the ingredients at one place.
