This, Plant Based Tomato Avocado Salad, is a quick fix recipe which I look upon, for some light dinner during hot summers. Its a very easy and simple recipe made with few basic ingredients.

Even the salad dressing uses very few basic everyday ingredients.

This salad just as I stated, is the simplest salad out of all my Salad Recipes Collection.

Possible Alterations for the recipe, ‘Avocado, Tomato and Cucumber Vegan Salad’:

Other veggies to add: These are the best raw veggies that can be added>> Grated / Diced carrots, Finely Chopped cabbage, De-seeded but diced bell peppers.

To Replace Balsamic Vinegar: White Wine Vinegar (or) Apple Cider Vinegar, can be used.

WFPB Diet / Whole Food Plant Based Options: Just eliminate using the oil and sugar in the recipe. Instead, you might use, Nutritional yeast to give that cheesy texture and Maple syrup for the sweetness.

Health Benefits of ‘Avocado and Tomato Simple Salad Recipe’:

Avocados: are Nature’s butter. They are rich in protein, fibre and iron. But too much of avocado is not suitable for weight watchers.

Tomato:  are an excellent source of Vitamin C and K. Being a water vegetable / fruit, tomatoes are generally low in Cals.

Cucumbers: are very low in calories and their skin contains fibre. Which can help us maintain a healthy weight.

To conclude: This salad recipe, absolutely comes under Weight Loss Transformation diet. And is also suitable for Vegetarian, Vegan, Plant Based, Gluten free, Kids Friendly, Diabetic Friendly, Whole Foods Plant Based, WFPBNO (see Possible Alterations section) diets.

Its great for quick dinners, picnic foods, gatherings and kids parties.

Ingredients:

  • Avocado (diced) – 2 cups
  • Tomatoes (diced) – 1½ cups
  • Cucumber (diced) – 2 cups
  • Basil leaves – 8 to 10
  • Mint leaves – a handful (finely chopped)

For Salad Dressing:

  • Olive Oil – 4 tablespoons
  • Balsamic Vinegar – ½ tablespoon
  • Sugar – 1 tablespoon
  • Lemon / Lime Juice – 3 tablespoons
  • Red Chilli Flakes – 1 teaspoon
  • Salt – as per taste
  • Ground Black Pepper – 2 teaspoons

Special Ingredients:

  • Balsamic Vinegar
  • Fresh Mint Leaves

Step Wise Pics Procedure for ‘Avocado and Tomato Simple Vegan Salad’:

Get all the ingredients at one place. Cut the avocado at the centre, de-seed and scoop the flesh off using a sharp spoon.

Dice the cucumber, onion and tomatoes into bit size pieces. Squeeze off the lime juice. Finely chop the mint leaves.

Dressing: In a wide mixing bowl, add all these>> olive oil, balsamic vinegar, sugar, salt, dry chilli flakes, lemon juice, ground black pepper powder.

Mix up everything thoroughly such that sugar is mixed well.

Transfer all the diced veggies into the same mixing bowl. Add the chopped basil leaves, mint leaves.

Gently toss everything using a ladle on each hand. See that the dressing is well incorporated onto the veggies.

Transfer the salad into a serving bowl. Serve immediately. Done!!

Tips & Storage:

  • Adjust the salt & spice as per your taste.
  • Storage: This salad is not recommended for storage, as the avocado might turn dark and the cucumber might ooze out water.  
  • On the other hand, might be better, if the vegies are diced and packed separately, and the dressing also packed separately. In this way, its easy to carry for any picnic / gatherings.

Result:

  • The taste of this simple salad is more than awesome.
  • It has a combination of crunchy cucumber, smooth avocado, soft tomatoes coated with tangy Vinaigrette Dressing.
  • The husband said, “Aptly voted for light dinner on a hot summer day”. 🙂

Ingredients
