Dates Sesame Pumpkin Seeds Protein Balls or simply called as Khajoor Til Ke Laddu, are a super healthy energy balls packed with wholesome goodness and a burst of natural sweetness.
I am sharing here today these yummy treats marking the auspicious occasion of Ram Lalla’s Pran Prathishta happening tomorrow in Ayodhya, India. These protein-packed dates treats are a delightful way to fuel your body and satisfy your taste buds.

Possible Alterations for the recipe, ‘Khajur Til ke Ladduu / Dates & Seeds Protein Balls’:
Vanilla Essence: The addition of vanilla extract (2 tsp) rounds out the flavours.
Coconut: Shredded coconut (2 tablespoon) can be added just before rolling into balls, this gives a hint of tropical flavour.
Other seeds to add: You can include chia seeds, flaxseeds, just dry roast & powder them just like pumpkin seeds.
Additional Sweetness: Honey or maple syrup ( 2 to 3 tablespoons), can be added for additional sweetness.

Ingredients:
- Medjool Dates / Khajur – 2 cups (40 count)
- White Sesame Seeds / Til / Nuvvulu – 1½ cups
- Pumpkin Seeds – ½ cup
- Elaichi / Cardamom Powder – 1 teaspoon
- Coconut Oil / Ghee – 1 tablespoon (optional)
- Honey – 2 tablespoons (optional)
Special Ingredients:
- Pumpkin Seeds

Step Wise pics Procedure for ‘Dates Sesame Pumpkin Seeds Protein Balls / Khajoor Aur Til Ke Ladoo’:
Prep Work:
Gather all the ingredients at one place. Pit the dates, remove and discard the seeds.

Cooking:
Put a frying pan on stove top over medium flame. Add the pumpkin seeds.
Dry roast by stirring continuously until the seeds give a pop up sound.
Remove the seeds into a separate plate.

Place the pan back on stove. Add all the sesame seeds.
Fry them by stirring continuously until the seeds release pleasant aroma (or) they start popping up.
Immediately switch the flame off. Remove the seeds onto a separate plate.

Grinding:
Once cooled, take the roasted pumpkin seeds into a food processor / spice grinder. Grind them coarsely and transfer into a mixing bowl.
Leave few tablespoons of the roasted sesame seeds aside, but grind the rest of them coarsely.
Take the powdered pumpkin seeds and powdered sesame seeds into a mixing bowl.

In the same way, take the pitted dates into the processor/grinder, grind without adding water.
Leave two tablespoons of powdered sesame seeds and powdered pumpkin seeds aside.
Into the dates mix, add the rest of the powdered sesame seeds and powdered pumpkin seeds.
Just a give a pulse in the processor so that everything is mixed well.

Put the frying pan back on the stove top over medium flame. Add the coconut oil / ghee. Let it melt.
Switch the flame off. Add the dates – seeds mix to the pan.
Now, add the elaichi / cardamom powder then, mix everything well.

Rolling:
Wet your hands with few drops of oil/ghee. Make small balls out of the dates mix. Roll them into perfect balls.

Add the sesame seeds (which we kept aside) to the left over sesame – pumpkin seeds powder.
Coat each ball with this powdered mix. This is an optional step. Done!

Tips & Storage:
- Adjust the sweetness (number of dates) as per your taste.
- You can toast the seeds in an oven as well.
- Grind the roasted seeds only when they are completely cooled down, if not they make a paste instead of powder.
- I did not use ghee, but I have used only coconut oil here.
- Storage: Transfer the Dates Seeds Energy Balls / Khajur Til Laddu into a clean, dry, air tight container.
- Store it in a cool place. This way the energy balls stay good for up to 15 days.
Result:
- These Energy balls with Dates, Sesame Seeds and Pumpkin Seeds have a delicious and unique aroma.
- Dates have a rich, caramel like sweetness that adds a natural sugar boost to the entire recipe.
- Toasted pumpkin seeds give a nutty, slightly earthy flavour and a crunchy texture to the energy balls.
- The sesame seeds bring a mild and subtle aroma to the laddu.
- Overall, these energy balls have a sweet and nutty taste, with a chewy and slightly crunchy texture.

Equipment
- 1 Frying pan (for stove-top method)
- 1 Wide Mixing Bowl
- 1 Food processor / Blender / Mixie.
Ingredients
- 2 cups Medjool Dates / Khajur (40 count)
- 1½ cups White Sesame Seeds / Til / Nuvvulu
- ½ cup Pumpkin Seeds
- 1 teaspoon Elaichi / Cardamom Powder
- 1 tablespoon Coconut Oil / Ghee (optional)
- 2 tablespoons Honey (optional)

1cup=250ml; ¾ cup=180ml; ½cup=125ml; 1 tbsp=14ml; 1 tsp = 4ml
