Vegan Mayo & Green Peas Spicy Sandwich

Being a South Indian, my most preferred food, both to eat and cook, is rice with South Indian style curry / dal.

Once in a fortnight my husband favours roti with a Masala side, so I make it for his sake.

At times when, for whatever reason, neither of these appeal to my kids, these sandwiches become an instant appealing option for them. 🙂 

Us being vegetarians (not eating eggs too), this mayo is a frequent visitor in my kitchen. This recipe produces an incredibly taste-bud-tantalising mayo. Each time I make this, my kids live for it.

For this sandwich, I used green chillies, while this may seem like a lot of spice but I can assure you that the home- made mayo is quite spice absorbent.

Health Benefits of ‘Vegan Mayo & Green Peas Spicy Sandwich’:

Bread, comprises the carbs, cashews & cheese provide the protein & fat.

Green Peas & lettuce leaves give the necessary iron & fibre. Hence, I consider this sandwich as a wholesome meal.

To conclude, this recipe is suitable for Vegetarian, Vegan, Plant Based, Kids friendly diets.

Ingredients:

  • Bread Slices – 4
  • Frozen Green Peas – ½ cup
  • Capsicum / Bell Pepper – ½ cup (chopped)
  • Grated Cheese – ½ cup
  • Tomato Ketchup / Chilli Sauce – 3 tablespoons
  • Green Chillies – 3 (chopped)
  • Fresh Lettuce Leaves – 6 
  • Butter – 2 tablespoons
  • Dry Herbs Mix – ½ teaspoon

For Vegan Mayo:

  • Cashew Nuts – ½ cup
  • Hot water – ½ cup
  • Pepper Powder – ¼ teaspoon
  • Salt – as per taste
  • Garlic Crushed / Powder – ¼ teaspoon (optional)
  • Olive Oil – 1 tablespoon (optional)

Special Ingredients:

  • Mayonnaise
  • Fresh Lettuce Leaves

Step wise pics Procedure for ‘Vegan Mayo & Green Peas Spicy Sandwich’:

To Make Vegan Mayo:

  • Soak the cashew nuts in hot water, for 10 mins.
  • Later, in a blender/processor, take the soaked cashew nuts along with the water.
  • Add salt, pepper powder, garlic powder and oil.
  • Blend everything until creamy in texture.
Gather the ingredients on to kitchen platform. And soak the Cashew nuts in hot water.

Prepare the sandwich filling:

Sandwich filling>>>>Vegan Mayo prepared in the processor, green peas, chopped bell pepper, dry herbs mix.

Make the Sandwich:

Apply butter only on one side of two slices. Join them such the butter side is shown up.

Put them on the grill pan / sandwich toaster and toast them.

Vegan Mayo & Green Peas Spicy Sandwich

On the NOT GRILL side of the bread, spread tomato sauce and place lettuce leaves as shown.

Spread grated cheese on to the sauce side, and sandwich filling mix on to the lettuce leaves.

Using a knife / pizza cutter cut each sandwich diagonally into 2 pieces. Done!!

Vegan Mayo & Green Peas Spicy Sandwich

Tips & Storage:

  • Adjust the salt and spice as per your taste.
  • While making the mayo, you can either use soaked water (or) add oil instead. I eliminated oil, used only soaked water.
  • For kids, try to eliminate / reduce the quantity of green chillies.
  • You can use any other bread of your choice. I used Wholemeal Bread in this recipe.
  • If you prefer to use your own mayo / store bought mayo, just replace it. 
  • Storage: Make the sandwiches, wrap them in cling film and store for 1 day in fridge.

Result:

  • These, Vegan Mayo & Green Peas Spicy Sandwich, were completely filling and you wouldn’t feel hungry till the next meal.
  • They are tasty on their own, no other side is needed actually.

  • Food processor / Blender / Mixie.
  • Grill Pan / Stove Top Pan cake pan
  • Wide Mixing Bowl

Ingredients
  

For Sandwich:

  • 4 slices Bread Slices
  • ½ cup Frozen Green Peas
  • ½ cup Capsicum / Bell Pepper (finely chopped)
  • ½ cup Grated Cheese
  • 3 tablespoons Tomato Ketchup / Sauce
  • 3 count Green Chillies (chopped)
  • 6 count Fresh Lettuce Leaves
  • 2 tablespoons Butter
  • ½ teaspoon Dry Herbs Mix

For Vegan Mayo:

  • ½ Cashew Nuts – ½ cup
  • ½ Hot water – ½ cup

  • as per taste Salt

    What is the “dry herbs mix”?

      Hi Brian, Its just a mix of few herbs that are dry.. like parsley, mint, oregano, thyme etc… we get such herb mixes readily available in any super markets. hope u got me!

    how is this vegan? it has dairy cheese….

    1. Why because, for all my recipes, I always use Vegan / Plant based cheese (store bought) only.
