Remember, previous weekend was Father’s day, right? My kids made a mini feast (recipes from my blog), for their dear Dad. Even, I felt I should be making special platter for him. Hence, I prepared this colourful & healthy NO ONION – NO GARLIC satvik platter, for my husband which he thoroughly enjoyed. 🙂 This thali has:
Sides: 1) Aloo – Matar Masala / Potato – Green Peas Gravy Curry 2) Spinach & Black-eyed Beans Saute Main: 1) Steamed White Rice 2) Avocado Roti / Whole Wheat Tortilla with Avocado Condiment: 1) Homemade Plain Curd / Yogurt topped with fresh mint leaves 2) Salad with sweet peppers, green chilli, tomato wedges with lemon juice Fruit: Fresh Mango slices

Tips & Plan to Follow:
The main prep work for this thali, is to get the black-eyed beans soaked the previous day. I generally store soaked beans in freezer, which makes easy. Started off with chopping the fresh spinach, potatoes, tomatoes & salad veggies.
I have only one Instant Pot, so I made the Aloo Matar Masala / Potato Green Peas Curry on Stove-top and Spinach & Black-eyed beans saute in the Instant Pot. (here is the nearest match for same recipe in Instant Pot>> South Indian style Potato Curry)
At first started with Aloo curry on stove-top. While its cooking, (took only 12 mins) washed & put the rice for cooking, in the Electric Rice Cooker.
Next, comes the Spinach saute in the Instant Pot. While its ON, I prepared the dough for Avocado Roti / tortilla using the food processor within 4 mins.
I boiled the beans in the Instant Pot, emptied the pot & made the saute as well in the pot itself within 5 mins. At last, finished off with Rolling & Making 5 avocado roti(s) within 5 mins.
All items made simultaneously but attentively. Multi-tasking and using all gadgets available is the key.
